Out in Parkland, where the dining scene already punches above its suburban weight, there’s a new restaurant opening with a name you’re not likely to forget.
Dear Olivia Bar & Kitchen debuts August 6 with cocktails that lean flirty, dishes built for cravings, and a vibe that’s more playful than polished. It’s the latest from P Hospitality, the team behind Corvina and Prezzo in Boca Raton. And yes, Dear Olivia is named after a nine-year-old.
Eddie Pozzuoli, Christina Pozzuoli, and Paul Greenberg
This is not a revival of the long-standing restaurant that closed in the same space in December, Déjà Blue. Restaurateurs Eddie and Christina Pozzuoli and partner Paul Greenberg of American Social are the same team behind recently revived Eddie And Vinny’s. This time, they’ve gone maximalist: TVs without calling it a sports bar, cocktails with mango puree and pressed ginger juice, and an “Adult Happy Meal” featuring fries, a martini, and a Caesar salad. Gimmicky, sure, but I’m also ordering one.

Parkland may be suburban, but the food scene out here is serious. High-end spots like Pasta And make a case for white-tablecloth dining west of I-95, while spots like Woodlands Indian and Gabose Korean have long helped western Broward serve as a pilgrimage site for anyone who knows good regional food. Dear Olivia slides somewhere in between: accessible, ambitious, and willing to serve truffle flatbread.
Greenberg calls it his most personal project yet. That comes through in the details: honey-butter biscuits, brisket French dip, a cocktail called the Blood and Honey. A glam green-tiled bar sits at the heart of the space, surrounded by a palette Olivia herself might’ve picked—soft greens, blush corals, the kind of décor that says “fun brunch spot” more than “fine dining.” And that’s exactly the point.
Dear Olivia officially opens August 6, with brunch launching later in the month. As for the little girl behind the name? “I like them to come to my restaurant,” she says, “and I like to see people smile.” So far, she’s off to a solid start.
