Henlopen City Oyster House in Rehoboth Beach runs on the simplest idea in a coastal town: seafood is a must. Chef Justin Jordan’s menu makes that plain with big, direct dishes, including bouillabaisse loaded with clams, scallops, fish, shrimp, and mussels in saffron tomato broth, finished with rouille toast.
The bluefin toro crudo pictured above lands with a smoked tomato ponzu, lime, spicy mayo, and jalapeño. THe ora king salmon tartare is a testament to how fresh fish can elevate a simple dish. And the seafood platter is a towering collection of what just came off the boat up and down the East Coast: Georgia red shrimp, Maine mussels, Florida grouper ceviche with clementines, and scallops from Massachusetts.
The sandwich section keeps things practical, including a New England lobster roll with mayo and scallions on a split-top roll. The point is not reinvention. The point is that every single dish here is what everyone wants when they’re eating this close to the ocean.
