The drive to Goose Cove is part of the appeal. You wind your way out to Deer Isle, past enough water views and quiet roads to start thinking Maine has already done its job in making the night feel special. And then Aragosta shows up to remind you that maybe the best part of Maine is what appears on plates.

Chef-owner Devin Finigan has built the kind of place that makes a long drive feel less like effort and more like decent judgment. She moved Aragosta to Goose Cove in 2019, giving the restaurant room to spread out across a 21-acre waterfront property with cottages, suites, gardens, an orchard, and an apiary, which sounds like the setup for a lifestyle fantasy until the food arrives and gives the whole thing some backbone.

Finigan was a James Beard semifinalist for Best Chef: Northeast, and the restaurant has picked up national attention for good reason. What I like about Aragosta is that it does not rely on the usual coastal-Maine cheats. Yes, the setting is gorgeous. Yes, the room looks out over the water. But the point is that the kitchen is serious, with seasonal tasting menus in summer and fall and a menu built around the fisheries, farms, and ingredients of this part of Maine.

Oysters might show up with mignonettes sharpened by strawberry, dulse, or blueberries, apples, and bacon. Scallops and mussels come through a tidal broth that folds lobster stock into dashi. Baby vegetables get grilled and hit with fish sauce caramel, which sounds like the kind of idea that can go wrong in a hurry, except here it lands exactly where it should. Paella arrives spiked with whatever came off the boat that day (although you can bet on lobster claws). And then there is the halibut, the local seafood, the herbs and flowers from the property, all of it handled with enough restraint that the meal never turns into a lecture about sourcing.

That is what makes Aragosta worth it. Finigan clearly has range, but the better trick is that she knows when not to show off.
