Aspen’s Best Restaurants Are Changing With the Seasons

A Michelin-starred tasting menu shares the town with French-Indonesian cooking, a new Parisian bistro, and enduring local favorites.

I’ve been to Aspen enough times to know the gondola is only one way to plan a day here. I’ve watched the restaurant scene change between visits, from long dinners at the Hotel Jerome and The Little Nell to a Michelin-starred tasting menu at Bosq and newer tables serving French-Indonesian and Peruvian cooking. These are the best restaurants in Aspen I’d put on the itinerary, whether you’re coming for the slopes or staying long after the snow is gone.

Betula

From its second-floor perch, Betula has a view of Aspen Mountain that could distract you from dinner. Chef-owner Laurent Cantineaux counters with tuna ceviche set against crispy black rice and tuna tacos with guacamole and pico de gallo. His menu moves between French technique and flavors from across the Americas. You can look out at the mountain between courses; it will still be there.

Best for: Dinner with a mountain view

Bosq

Chef-owner Barclay Dodge goes into the woods around Aspen looking for ingredients, then brings what he finds back to Bosq. His changing tasting menus put foraged and fermented flavors alongside more familiar pleasures. Choose five courses, or let Dodge steer a meal of nine or more. Bosq has Aspen’s Michelin star, and its best trick is making the mountains outside feel present at the table.

Best for: A tasting menu rooted in the Rockies

Cache Cache

Cache Cache opened in 1987, and chef Chris Lanter joined the kitchen in 2000. That’s a lot of Aspen winters, and plenty of time to learn what keeps people coming back. The menu draws on Colorado farms and French technique, while caviar arrives with house potato chips. It’s an Aspen combination I can get behind: spend extravagantly, then eat with your fingers.

Best for: A long dinner over wine

Element 47 is inside The Little Nell, where the wine cellar holds more than 20,000 bottles. That number can make choosing a glass sound like a research project, but the staff is there to help. The Michelin Guide–recommended kitchen works with Colorado wagyu, seasonal produce, and house-made pasta. Settle in for dinner, ask a few questions about the wine, and see where the evening goes.

Best for: Wine and a celebratory dinner

Mawa’s Kitchen

Mawa McQueen gives Aspen something you won’t find on every mountain-town menu. At Mawa’s Kitchen, plantain bread comes with charcoal butter and wildflower honey, beef suya skewers carry West African spice, and rotisserie chicken gets a Senegalese lemon-onion glaze. McQueen has been a James Beard Award semifinalist, and the restaurant is Michelin Guide recommended. I’d start with the bread, then take my time deciding what follows.

Best for: West African flavors in the Rockies

Mt. Rubirosa

Mt. Rubirosa sits near the gondola, ready for a crowd that has spent the day skiing or watching other people ski. Its tie-dye pizza carries swirls of tomato, vodka sauce, and pesto, with meatballs and pasta available for anyone who still needs convincing. Bring a group, order too much, and let the pizza make its way around the table.

Best for: Pizza with a group after skiing

PARC Aspen

Chef Stefano Schiaffino’s tasting menu at PARC Aspen draws on his Peruvian heritage and ingredients from Colorado farms. A recent version opened with halibut ceviche in leche de tigre, then moved through Andean grains, anticucho with bucatini, and duck with cilantro rice. It’s a dinner built around the way Schiaffino cooks, rather than a parade of expensive ingredients. Give him the evening and see what comes next.

Best for: A Peruvian-inspired tasting menu

Petit Trois

Aspen can get cold enough to make French onion soup feel like a practical decision. At Petit Trois in the MOLLIE hotel, chef Ludo Lefebvre follows it with Burgundy escargots, steak frites, and his signature omelette. The bistro is a newer arrival in town, though the menu knows precisely what it wants to be. After a day outside, I wouldn’t argue with any of it.

Best for: French bistro classics after a cold day

Prospect

Prospect gives you a reason to walk into the Hotel Jerome even if you aren’t staying there. The Michelin Guide–recommended restaurant serves seasonal American cooking inside one of Aspen’s oldest hotels. Dinner can make an evening of it: take your time at the table, then wander over to the J-Bar, where the building’s long history is easier to contemplate with a drink.

Best for: Dinner at the Hotel Jerome

Wayan

Cédric and Ochi Vongerichten tested Wayan in Aspen with pop-ups before opening a permanent restaurant. Now you can order lobster noodles with black pepper butter and Thai basil, crab fried rice, and Colorado lamb satay without waiting for the next visit. The French-Indonesian menu gives a table plenty to pass around. Bring people who understand that “just a taste” of the noodles may require negotiation.

Best for: A shared dinner with bold flavors

West End Social

West End Social sits at Aspen Meadows, away from the traffic around the gondola and in full view of the mountains. Colorado producers help shape a menu that works for a few shared plates or a longer dinner. Go while there’s daylight left. You can watch the mountains change color from the table, then return your attention to what you ordered.

Best for: A leisurely dinner with mountain views

ZigZag

ZigZag moved into Mezzaluna’s old spot near Aspen Mountain and kept the wood-burning oven. It puts that oven to work on dishes including a pork chop, giving the address a new menu without erasing what people remember about it. Stop at the bar after skiing, take a look at what’s coming out of the kitchen, and decide whether you’re going home just yet.

Best for: Wood-fired cooking near the mountain
