Conifer is a dedicated gluten-free restaurant in Bentonville that leans hard into farm-to-table cooking. Chef-owner Matthew Cooper keeps the menu changing based on what’s fresh, which is why the lineup reads like a snapshot of the season instead of a greatest-hits album.

Recent dishes have included cheddar biscuits with whipped butter, roasted cauliflower with honey, lime, chili, and pistachio, and beets with sheep’s milk feta and pine-nut chili crisp, plus heartier plates like mushroom pasta with roasted garlic cream and parmesan and petrale sole with brussels sprouts, currants, brown butter, and almonds.

For dessert, expect dishes like buttermilk cheesecake with blueberry compote and apple crumble with vegan cream, which is a smart way to end a meal that’s already impressed. Reservations run through Tock, and the room is the kind of calm, date-night-friendly space where the food sets the pace.
