StoneHouse Chaffee Crossing sells itself on steak, and chef Joshua Torres keeps that promise without turning the menu into a list of cuts and coping mechanisms. The Black n Gold bisque comes out dark and rich, a lobster bisque finished with saffron and squid ink cream, which shows the kitchen is not aiming for tried-it-before.
