COYO Taco and Chèvre Add a Caviar Bump to Tacos

A collab between the Miami cheese shop and taqueria means tortillas, Tetilla cheese, Wagyu, and caviar.

Living in Miami, you see caviar on a lot of things, from fried chicken, to croquetas, to hot dogs. But tacos, it seems, have remained inexplicably caviar free.

That changes Oct. 6, when Chèvre and COYO Taco team up for National Taco Day. They’re making two limited-edition tacos: one with caviar at Chèvre’s Coral Way shop and another with Japanese Wagyu at COYO’s Wynwood and Coral Gables locations. Both are available only that day, while supplies last.

At Chèvre, the COYO Chèvre ($35), above, begins with a blue corn tortilla, it layers Tetilla, COYO’s salsa negra, balsamic pearls, and Golden Goat caviar. The cheese, smoke, and briny caviar get the whole taco to themselves. Chèvre already sells Golden Goat caviar alongside its deep selection of cheeses, so this is familiar territory for the shop, if a new destination for the tortilla.

COYO’s Wagyu Diablo, below, starts with one of its hand-pressed corn tortillas and adds Japanese Wagyu, Chèvre’s creamy Tetilla cheese, smoky salsa negra, and fried papitas. The potatoes make good sense: Beef, cheese, and something crisp rarely need a lengthy explanation. COYO already builds its regular menu around tortillas made on-site, with fillings that include al pastor pork and duck confit. This special gives that familiar format a particularly rich afternoon.

Chèvre began as a cheese shop before becoming a sandwich destination, too. Founder Mario Naar has made a specialty of giving good cheese a starring role, whether that means a mortadella sandwich with sheep’s milk ricotta, basil pesto, and truffled honey, or a weekly cheesesteak with melted Tetilla. COYO, meanwhile, has been making its own tortillas and smashing guacamole to order since its early days in Wynwood. Neither partner has to learn a new trick to make this collaboration work.
