Traverse City sits beside enough water to make an oyster bar feel inevitable. It just took Sarah Welch and Cameron Rolka to notice the empty space.

The husband-and-wife team has opened Umbo, a 25-seat seafood bar in downtown Traverse City, with Rolka leading the kitchen and Welch running the front of house. The couple brings more than a decade in Detroit restaurants, including Marrow and the seafood-focused Mink. Welch has earned four James Beard nominations for Best Chef: Great Lakes, reaching the finalist round in 2023. She also finished as a finalist on “Top Chef: Houston.”

The design was handled by Detroit firm Synecdoche, which aimed to create a restaurant that feels like dining inside a shell. Curving forms, warm wood, stone counters, and textured panels overhead give the narrow space a softly enclosed quality. Taylor Made Studio completed the millwork, and Semi:Formal creating the branding. Every indoor seat faces the central kitchen and oyster bar, which makes the restaurant feel less like a dining room than a particularly civilized place to watch someone prep shellfish.

Oysters lead the menu, with eight to 14 varieties typically available from the East and West coasts. Welch talks about them much as a sommelier might discuss wine: Their flavor changes according to the water, salinity, temperature, and conditions in which they grew. The restaurant’s name refers to the raised section near the hinge where a bivalve shell begins growing. “It’s the starting point of an oyster,” Welch told Northern Express. “This is our starting point, built on previous experience.”

But the menu reaches well beyond the raw bar. Rolka has cooked at restaurants including the three-Michelin-starred Martín Berasategui in Spain, and Umbo serves caviar, tinned seafood, finfish, local vegetables, and meat sourced from nearby farms. The drinks list includes wine, beer, and batched cocktails.

Welch and Rolka had spent years traveling north from Detroit before deciding to reverse the arrangement and make Traverse City home. They bought a two-story building on East Front Street, converted the ground floor into the restaurant, and moved upstairs. It is a tidy solution to the restaurant industry’s famously forgiving commute.

Patio service and oyster-shucking classes are planned. For now, Umbo reserves at least a third of its tiny bar for walk-ins. Traverse City finally has its dedicated raw bar. It arrived with just enough seats to make securing one feel like part of the appetite.
