There’s no walk-in line for Brad Kilgore’s newest kitchen. Pier Sixty-Six in Fort Lauderdale announced today that the Miami chef will take over F&B for its invitation-only private club. If you’re not a member, you can’t book a table, and that’s rather the point of the place.
Kilgore built his name in Miami. Born and raised in Kansas City, he cooked in Chicago at Alinea and L2O, a pair of kitchens that collected Michelin stars the way other places collect regulars, before moving south in 2011. In 2015 he opened Alter in Wynwood, a tasting-menu restaurant built on Florida ingredients that became one of the defining Miami restaurants of its era. His Kilgore Hospitality Group now runs restaurants well beyond South Florida, but this is his first move into Broward County.
The club tested the fit first. Kilgore cooked a sold-out dinner series in the club’s Garden Room earlier this year. Now, as the club heads into its second year, his group is its exclusive culinary partner, shaping everything from menu development and service to private events. “What excites me about partnering with The Club at Pier 66 is getting to know the members—what they love to eat and what they’re curious to try,” Kilgore said.
The range he’s planning is wide on purpose. There will be intimate multi-course tasting menus with wine and cocktail pairings, seasonal events, and poolside pop-ups that run from light, casual fare to slow-smoked Kansas City-style barbecue.
Lunch in the Orchid Room, the members’ day lounge, is being refreshed around lighter, wellness-focused dishes, with menus shaped to individual members’ tastes and dietary needs, and an expanded private-events menu is set to debut ahead of the holiday season.
The club sits inside Pier Sixty-Six, the waterfront resort on the Intracoastal Waterway whose dining already runs to a dozen restaurants and bars, from the rotating Pier Top lounge to Calusso. Kilgore’s program is the members-only layer on top of all that. There is, however, a door left ajar for the rest of us: the club plans collaborations between Kilgore and the resort’s other restaurants, and specially invited guests will be welcomed to select club dinners. For now, the surest way to eat his cooking in Fort Lauderdale is to know a member, or to be one.
