When I first started coming to Kalamazoo for work, I expected to find good beer and the sort of food that encourages another round. Bell’s has been brewing here since 1985, and Oberon Day is now celebrated with parades, midnight tappings, and the enthusiasm normally reserved for winning a championship. But around all that beer, Kalamazoo has built a dining scene with Great Lakes whitefish, house-made pasta, duck breast with mezcal, and a chef in a Victorian castle serving frog legs in absinthe butter. After years of research trying every good restaurant in Kalamazoo, here are the city’s best restaurants right now.

In a former factory east of downtown, chef Adrianna Balduf serves fried chicken with Robuchon potatoes and gravy, a ribeye with pavé potatoes, and grilled chicken finished with beurre blanc. The building’s old loading-bay doors now open onto a patio, one of several clues that 600 Kitchen & Bar has come a long way from its industrial years. Balduf also runs a Test Kitchen series built around one ingredient at a time. Diners try the experiments and vote, giving everyone the temporary authority of a restaurant critic.

Best for: Comfort food with a few experiments

Bell’s began in 1985 with a 15-gallon soup kettle and an owner delivering beer in the back of his car. Its Eccentric Café now has more than 20 taps, a concert venue, and a beer garden large enough to lose your friends in. Some pours are brewed only for the café, a good reason to ask questions before automatically ordering Two Hearted. The kitchen smokes whitefish for a dip served with grilled bread and braises pork in Amber Ale for tacos with consommé. Beer remains the point, although dinner has caught up.

Best for: Drinking Bell’s at the source

Chef Matt Bush and Allison Maxwell opened Bird Dog in a former fried-chicken shop in Mattawan, about 15 minutes west of Kalamazoo. The small building still has the proportions of its previous life, with an open kitchen and only a handful of tables. Bush fills them with coconut ceviche, duck barbacoa tostadas, chicken cutlets in beurre blanc, and Ora King salmon with ancho-pepper purée. Snake River Farms wagyu also appears on the menu. Arrive late and dinner may begin with standing outside and looking through the windows.

Best for: A small restaurant doing a lot

Brick and Brine sits inside the Radisson downtown, where a 10-seat table looks directly into the kitchen. Reserve it and the chefs assemble a multi-course dinner, with rare-spirit tastings available for groups determined to make an evening of it. The regular menu is plenty involved: pappardelle with lamb ragù and lemon ricotta, ricotta gnocchi carbonara, and pressure-fried chicken with honey, pickles, and garlic fries. There is also a 32-ounce tomahawk ribeye, which arrives for two and probably feeds whoever is watching from the next table.

Best for: Dinner beside the open kitchen

Walk through Sawall Health Foods and head upstairs, where Café ’36 operates above a market that has sold natural foods since 1936. The menu follows that connection with organic and sustainably sourced ingredients, though dinner gets considerably richer than the route suggests. Scallops come with parsnip purée and brown butter, Great Lakes whitefish with corn and shiitakes, and a Kurobuta pork chop with root vegetables and cherry-port reduction. There's also an entire pizza section to the menu, where the brick-oven-fired pies include a pesto chicken, four mushroom, and a spot-on margherita.

Best for: Fine dining above the health-food aisles

Getting to Crow’s Nest requires climbing the narrow staircase above Fourth Coast Café. At the top, you will likely find a line and several people discussing what they plan to order when they finally sit down. Breakfast is served all day, including cinnamon roll French toast, huevos rancheros, corned-beef hash, and the Farmer’s Skillet with eggs, sausage, bacon, vegetables, and potatoes. Vegan dishes receive their own section instead of one apologetic option. The tofu scramble with mushrooms, zucchini, sun-dried tomatoes, and pesto proves somebody in the kitchen is paying attention.

Best for: Breakfast at the top of the stairs

Tom and Jan Rose run Four Roses in Plainwell, about 15 miles north of downtown Kalamazoo. Tom Rose changes the menu according to what he can buy from nearby farms and markets, though a few dishes have become regulars. Whitefish Grenoble gets tomatoes, lemon, and capers, while beef spends hours braising in Bell’s Kalamazoo Stout. Duck breast, maple-mustard ribs, and filet mignon rotate through as well. The dessert list is long enough to warrant reading before dinner, when there is still time to make responsible choices.

Best for: Dinner followed by several desserts

Henderson Castle has overlooked Kalamazoo since 1895, now serving as home to h Chophouse, where chef François Moyet serves caviar, foie gras, and frog legs cooked in absinthe butter. Beef Wellington and duck à l’orange cover the French standards, and flambéed entrées bring open flames to the table. Moyet offers a $199, 17-course menu that lasts about three hours and includes escargot, lobster, Cornish hen, baked brie, and several desserts. It’s just as formal as you’d expect from dinner in a castle, which means, yes, you should wear your finest.

Principle opened on the Kalamazoo Mall in 2015, when the city had plenty of breweries and fewer places obsessing over cocktail bitters. The bartenders make their own syrups and build drinks that can require as much explanation as the food. Confit duck wings come with pineapple and chile, cheddar biscuits arrive with bacon jam, and pork belly shares a plate with wild rice, blueberry cornbread, and local kimchi. A darker bar downstairs allows dinner to continue after everyone has agreed that dinner is over.

Best for: Cocktails that lead downstairs

ROCA sits a few doors from Principle, its sister restaurant on the Kalamazoo Mall. The menu starts with birria rolls stuffed with beef barbacoa, corn, and cotija, accompanied by broth for dipping. Grilled octopus comes with avocado purée and chimichurri. Farther down are duck breast with mezcal and lime, pork enchiladas verdes, and hanger steak under a Peruvian pepper glaze. The bar collects tequila, mezcal, raicilla, and Mexican rum. By the second drink, the distinctions become either clearer or far less urgent.

Best for: Mezcal and grilled octopus

Rustica looks as though it has occupied its downtown storefront far longer than it has. There are white tablecloths, exposed brick, and windows facing the Kalamazoo Mall, while the kitchen works through the European repertoire. Roasted duck breast, handmade pasta, braised lamb shank, and Icelandic cod all appear. A wagyu flank steak comes with duck-fat potatoes, onion-bacon jam, broccolini, and bordelaise. Dinner here tends to slow down somewhere around the wine and pick up again when the Callebaut chocolate reaches the table.

Best for: European cooking downtown

Beef borek arrives inside crisp phyllo, muhammara combines roasted peppers and walnuts, and grape leaves get a sharp edge from pomegranate sauce. Chicken fesenjoon is cooked with walnuts, tahini, turmeric, and pomegranate molasses. There is also beef stewed with figs and apricots and a lamb shank served over rice with almonds and raisins. Iraqi cardamom tea should buy enough time to consider dessert.
